  • ½ pound bread crumbs

  • 1/8 teaspoon oregano
  • ¼ cup flat-leaf parsley,minced
  • 1 cup olive oil
  • ¼ teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • ½ cup flour
  • 2 eggs, beaten
  • 1 tablespoons water
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1¼ pounds beef round steak, pounded thin to slightly less than ¼ inch,(8 steaks)
  • 1 /2 teaspoons salt
  • 1/4 teaspoon freshly ground black pepper,to taste
  • 1 lemon, cut into 8 wedges

How to Make

  • Step 1: Put the crumbs to a large bowl and stir in the cheese, oregano, and parsley. Gradually

  • Step 2: Add 3 tablespoons of oil, stirring, until thoroughly combined.

  • Step 3: Season with the salt and pepper.

  • Step 5: Place the beaten eggs in a shallow bowl with salt and pepper beaten in

  • Step 6: Coat each veal cutlet in the flour, then the beaten eggs, and then the bread crumbs, patting with the palm of your hand to ensure it sticks.

  • Step 7: Heat 1 cup of the oil in a large nonstick skillet over medium-high heat (to a frying temperature of 350 F) and sauté the beef for 2 minutes.

  • Step 8: Turn and sauté for 1 additional minute. Do not crowd pan.

  • Step 9: Fry the cutlets in batches.

  • Step 10: Remove and drain on paper towels. Season to taste with salt and pepper, and serve with lemon wedges.
