Step 2: And a bowl of seasoned flour
Step 3: Heat oil and butter in skillet
Step 4: Rinse fish off
Step 5: Season lightly
Step 6: Dredge in the seasoned flour
Step 7: Then the egg
Step 8: Then back in the flour
Step 9: Place in hot skillet
Step 10: Brown on both sides
Step 11: Remove to paper towel covered plate
Step 12: Deglaze pan with wine and lemon juice scraping bottom
Step 13: Add chicken broth and 2 tablespoons of the seasoned flour mixed in
Step 14: Cook down
Step 15: Add fish back in to warm for 5 minutes
