Ingredients

The ingredients are:
  • 2 cans(30 ounces)pinto beans,(15 ounces each)
  • 4 cups water
  • 1 teaspoon salt
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 can (15 ounces) tomatoes ,diced
  • 2 ancho chiles,deseeded,minced
  • 1/2 pound yellow summer squash, chopped
  • 1/2 pound zucchini,chopped
  • 2 cups frozen corn kernels
  • 1 tomato,chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 2 tablespoons oil
  • 2 cups yellow onions, cut into 1/4-inch squares
  • 2 cloves garlic, finely chopped
  • 2 tablespoons red chili powder, to taste
  • 8 ounces frozen green beans, cut into 1-inch lengths
  • Garnish:
  • 4 ounces monterey jack cheese, grated
  • 1/2 cup fresh cilantro leaves, roughly chopped

How to Make

  • Step 1: Heat the oil in a large skillet

  • Step 2: Saute the onions and peppers over high heat for 2 minutes.

  • Step 3: Lower the heat

  • Step 4: Add the garlic, chili powder, cumin and coriander and stir everything together. Add a cup of water, so the chili doesn't stew for 5 minutes.

  • Step 5: Add rest of ingredients

  • Step 6: And simmer for 60 minutes

  • Step 7: Add water if to thick

  • Step 8: Take bay leaf out

  • Step 9: Bowl up

  • Step 10: Garnish
