Step 1: Whisk together 3 to 4 tablespoons wine vinegar, 3/4 teaspoon salt, 1 teaspoon Dijon mustard, 1 crushed garlic clove. (Add a little finely minced onion if desired.) Gradually whisk in 3/4 cup salad oil. Season with freshly ground black pepper, salt to taste if needed, and chopped herbs if desired. Makes 1 cup.
