Ingredients

The ingredients are:
  • 600 grams chicken wings
  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons paprika
  • 1 tablespoons cayenne powder
  • 1 teaspoon salt
  • 1 clove garlic, peeled and finely diced
  • 1/2 teaspoon rosemary
  • 200 grams flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cornstarch

How to Make

  • Step 1: Remove tips from wings unless you have bought v wings or boomerang wings.

  • Step 2: In a mixing bowl, combine a cracked and beaten egg with the buttermilk and add all the herbs and spices to the bowl and combine fully.

  • Step 3: Add the chicken wings to the marinate, then cover and refrigerate overnight.

  • Step 4: The next day, combine the flour, baking powder and cornstarch in a separate bowl.

  • Step 5: Take 4 tablespoons of the marinade from the fridge and combine it fully into the flour mixture.

  • Step 6: Pre-heat the oven to 150°C.

  • Step 7: Heat up a shallow fry pan to a medium heat and take the marinated chicken wings and dip into the flour mixture ensuring all parts are covered evenly.

  • Step 8: Shallow fry the chicken, turning half way, for 5 minutes in total and then leave to one side.

  • Step 9: Transfer the fried chicken wings to a suitable baking tray and bake in the oven for another 20 to 25 minutes minutes or until fully cooked through.

  • Step 10: Remove from the oven and serve with a choice of condiments.
