  • 10 garlic cloves
  • 1 can (15 ounces) black olives,drained
  • 1 can (28 ounces )diced tomatoes
  • 2 cups chicken stock
  • 2 tablespoons fresh rosemary, minced
  • 2 tablespoons fresh thyme, minced
  • 2 tablespoons fresh basil, minced
  • 2 tablespoons fresh parsley, minced
  • 3 tablespoons olive oil
  • 1 teaspoons sea salt,to taste
  • 1/2 teaspoon freshly ground black pepper,to taste

How to Make

  • Step 1: Heat oven to 325 degrees Fahrenheit

  • Step 2: Season chicken with sea salt and freshly ground black pepper.

  • Step 3: Heat olive oil in dutch oven placed over a medium-high heat.

  • Step 4: Brown the chicken pieces for about 2 minutes on each side.

  • Step 5: Add the garlic

  • Step 6: And cook until browned.

  • Step 7: Add the tomatoes, olives, chicken stock, rosemary, and thyme.

  • Step 8: Cover and place in the oven for 1 hour.

  • Step 9: Add the basil and parsley, and place back in for 1 more hour
