Ingredients

The ingredients are:
  • 4 tablespoons olive oil divided
  • 3 garlic cloves ,minced
  • 1 cup unseasoned coarse breadcrumbs
  • 1 cup coarsely ground walnuts
  • 4 tablespoons fresh parsley, chopped
  • 1/4 cup golden raisins
  • 8 ounces dry spaghetti
  • 1/2 teaspoon salt,to taste
  • 1/2 teaspoon pepper,to taste
  • 1/4 teaspoon crushed red pepper flakes,to taste
  • 1/4 teaspoon lemon zest

How to Make

  • Step 1: Heat about 2 tablespoons of olive oil.

  • Step 2: Sauté the garlic until fragrant,(do not brown).

  • Step 3: Reduce heat to medium low and add the breadcrumbs.

  • Step 4: Add 2 more tablespoons of olive oil and combine.

  • Step 5: Stir together for about 2 minutes (breadcrumbs will get slightly toasted and should absorb the oil).

  • Step 6: Add the coarsely ground walnuts and stir fry for another 2 minutes.

  • Step 7: Add raisins lemon zest and parsley.

  • Step 8: Stir to combine for 1 minute.

  • Step 9: Set aside.

  • Step 10: Add up to 1 cup of the cooking water (from the pasta) if the mixture appears to dry.

  • Step 11: Meanwhile

  • Step 12: Bring a large pot of heavily salted water to a rolling boil.

  • Step 13: Add the spaghetti and cook until al dente.

  • Step 14: Drain the pasta and reserve about 1 cup of the cooking water.

  • Step 15: Drizzle more olive oil on.

  • Step 16: In a large serving dish

  • Step 17: Alternate layers of pasta and bread mixture

  • Step 18: Top with bread crumb mixture

  • Step 19: Seasoning to taste
