Step 1: In a saucepan over medium high heat combine all the ingredients (brown sugar -cardamom) and bring to a boil, stirring until sugar dissolves. Remove from heat and steep for 1 hour. strain syrup; discard solids. Let cool completely.
Step 2: To make soda: stir 1 1/2 tablespoon syrup (more or less depending on taste) to 1 cup of seltzer or tonic water.
Step 3: Syrup can stay chilled for up to 2 weeks.
