Ingredients

The ingredients are:
  • First Pan
  • 15 ounces chili con carne (1 can)
  • 1/4 cup onions
  • 10 ounces Rotel tomatoes (1 can)
  • Second Pan
  • 8 ounces chicken breast, raw, boneless, skinless, cut in half
  • 1 garlic clove, smashed
  • 2 tablespoons butter
  • 1 tablespoons oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon cumin
  • Garnish
  • 2 ounces cheddar cheese, shredded

How to Make

  • Step 1: First Pan: Put chili ingredients together saving 1/2 the onions. crushing the tomatoes, and simmer until chicken is done.

  • Step 2: Second Pan: Heat butter and oil.

  • Step 3: Season chicken and add garlic and 1/2 the onions and add to pan.

  • Step 4: Brown lightly, assuring chicken is cooked through; plate chicken with onions and garlic, dividing equally.

  • Step 5: Pour chili over chicken breast.

  • Step 6: Garnish with cheese, (my idea).
