Step 1: Saute red pepper in oil in large, heavy skillet over moderate heat for 6 minutes.
Step 2: Meanwhile
Step 3: Place tomatoes, garlic, ketchup,salt and black pepper in large heat-proof bowl.
Step 4: As soon as peppers are cooked, add to bowl and toss with tomato mixture.
Step 5: Let chill overnight.
Step 6: Garnish with parsley.
