Step 1: Combine water yeast, sugar
Step 2: Let proof a few minutes.
Step 3: Add shortening and half of flour, blending well.
Step 4: Knead in the rest of the flour and salt until you have a firm dough.
Step 5: Place in a covered, greased bowl and let rise in a warm spot while you prepare filling.
Step 6: Filling:
Step 7: Brown hamburger meat with chopped onions.
Step 8: Drain fat.
Step 9: Add mustard, mayonnaise, cheese, salt and pepper to taste
Step 10: Mix well.
Step 11: Set aside to cool.
Step 12: Prepare Burgers:
Step 13: Roll out dough and cut rounds using a
Step 14: 2 pound coffee can.(I'm using a large tomato juice can)
Step 15: Place 3 tablespoons meat mixture on top.
Step 16: Fold dough over and seal edges.( It's going to look like a hand pie)
Step 17: You can stretch dough around meat to seal (dough does not break as pie dough does).
Step 18: Place on lightly greased cookie sheet and let rise 30 minutes or so.
Step 19: (Cover with a warm damp dish towel to keep crust from drying out.).
Step 20: Bake at 350 degrees until lightly browned (less brown if you plan to freeze and bake later). Check at 15 minutes
