Step 1: Mix the steak ingredients except the meat and oil together in a bowl until the sugar has dissolved
Step 2: Place the steak in a ziploc bag,
Step 3: Add the marinade and gently massage it into the meat.
Step 4: Seal the bag with no air inside it and leave to marinate in the fridge for 8 hours.
Step 5: To make the dressing
Step 6: Warm the vinegar, lime juice and fish sauce in a small saucepan over a low heat.
Step 7: Add the sugar and stir until dissolved, then stir in the cilantro,Worcestershire sauce and red chilli.
Step 8: Half an hour before cooking remove the steak from the bag.
Step 9: Place a griddle pan over a high heat and carefully rub it with oil .
Step 10: Cook the steak for 2 minutes on each side, then turn it and cook for another minute, or until browned.
Step 11: Remove it from the pan and leave it to rest for 10 minutes.
Step 12: Meanwhile
Step 13: Cook the noodles in a saucepan of boiling water for 2 minutes
Step 14: Then drain and set aside.
Step 15: Heat the sesame and oil in a large wok over a medium heat.
Step 16: Add the chili ,ginger and shrimps and cook for 3 minutes.
Step 17: Add the noodles, cilantro and spring onions and stir in the soy sauce.
Step 18: Season with salt .
Step 19: To serve
Step 20: Place a twist of noodles on the plate. Slice the steak thinly and place it next to the noodles.
Step 21: Spoon some of the dressing over the noodles
