  • 1 tablespoons oil
  • 2 pounds pork shoulder ,trimmed, chopped
  • 1 onion, chopped
  • 1 clove garlic,smashed
  • 2 tablespoons chili powder
  • 5 zucchini,chopped
  • 2 yellow squash,chopped
  • 5 roma tomatoes, chopped
  • 1 can (10 ounces) rotel tomatoes with chili
  • 1 bag(12 ounces) frozen corn
  • 3 cups chicken stock
  • 1 bay leaf
  • 1 teaspoons salt
  • 1/2 teaspoon pepper, to taste

How to Make

  • Step 1: Brown seasoned pork with the onion in oil

  • Step 2: Add garlic and Chile powder

  • Step 3: Once cooked

  • Step 4: Add rotel-do not drain

  • Step 5: & chicken stock

  • Step 6: Cook 60 minutes until pork is tender

  • Step 7: Add calabacita (squashes)& tomato and corn

  • Step 8: Add salt and pepper to taste,

  • Step 9: Bring to boil

  • Step 10: Simmer for 30 minutes

  • Step 11: Take out bay leaf
