Ingredients

The ingredients are:
  • 3 ounces bacon,diced,(3 slices)
  • 1⁄2 cup onions,chopped
  • 1⁄4 cup red bell pepper,chopped
  • 1 can (14 1/2 ounce) can tomatoes,chopped,(reserve the juice)
  • 1 tablespoon tomato paste
  • 1⁄4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces cooked rice,(2 cups )
  • 1 cup tomato juice

How to Make

  • Step 1: Fry the bacon

  • Step 2: Remove

  • Step 3: Leaving about 1 Tablepoon of bacon grease in the pan .

  • Step 4: Cook the chopped onion and peppers a few minutes in the bacon grease .

  • Step 5: Then add everything else (having drained the tomato juice from the can and topped off with water to make 1 cup of liquid).

  • Step 6: Bring to a boil and cook 3-4 minutes.

  • Step 7: Stir.

  • Step 8: Turn the heat down to low, cover and cook another 15 minutes or so.
