Ingredients

The ingredients are:
  • Crepes:
  • 3/4 cup rice flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon turmeric
  • 2/3 cup coconut milk
  • 1/4 cup water
  • 2 teaspoons vegetable oil
  • Filling:
  • 4 leaf lettuce leaves
  • 4 teaspoons fresh thai basil,minced
  • 4 teaspoons mint, minced
  • 4 teaspoons cilantro,minced
  • 4 green onions,minced
  • 4 mushrooms,sliced
  • 1 cup bean sprouts,canned ,drained
  • 4 tablespoons oil
  • Sauce:
  • 2 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 4 tablespoons water
  • 1 clove garlic, crushed

How to Make

  • Step 1: Whisk sauce ingredients together

  • Step 2: Set aside

  • Step 3: Blend crepe ingredients together

  • Step 4: Set aside

  • Step 5: Meanwhile:

  • Step 6: Heat a teaspoon of oil in a 10- to 12-inch skillet over medium heat.

  • Step 7: And add mushrooms, and cook until heated through.

  • Step 8: Remove and set aside.

  • Step 9: Wipe the oil out of the pan and return to medium heat with a fresh teaspoon of oil.

  • Step 10: Pour half of the batter in the pan and swirl to distribute evenly.

  • Step 11: Sprinkle half of the scallions over the batter.

  • Step 12: Then arrange the mushrooms, cilantro and bean sprouts over half of the crêpe. When cooked through and edges are browned

  • Step 13: Add 1/2 of the rest of herbs your using

  • Step 14: Fold the crêpe over and slide onto a plate.

  • Step 15: Have lettuce leaves for outside

  • Step 16: Repeat for second crêpe.

  • Step 17: Dip crepes into sauce
