Ingredients

The ingredients are:
  • 3 ounces roquefort cheese,crumbled
  • 6 ounces cottage cheese
  • 2 tablespoons butter,softened
  • 1 ounce heavy cream,(3 tablespoons)
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1/16 teaspoon cayenne pepper, to taste
  • ½ tablespoon fresh chives,minced
  • ½ teaspoon green onion tops,minced
  • 1 pie crust (7 ounces),(9 inch)

How to Make

  • Step 1: Preheat the oven to 400 degrees Fahrenheit

  • Step 2: Prebake piecrust for 8 minutes.

  • Step 3: Take it out, poke holes in the bottom with a fork.

  • Step 4: Put it back in oven for 2 minutes.

  • Step 5: Take it out.

  • Step 6: Lower the oven to 375 degrees Fahrenheit

  • Step 7: Blend the cheeses, butter and cream with eggs in blender (they forced through sieve)

  • Step 8: Season to taste and stir in the chives and green onion tops.(I would add to blender at end)

  • Step 9: Pour into the pastry shell and set in upper third of preheated oven.

  • Step 10: Bake for 25 to 30 minutes or until quiche has puffed
