  • 1 3/4 cup flour
  • 3/4 teaspoons kosher salt
  • 2 sticks butter, softened
  • 1/2 cup sugar
  • 1 teaspoons vanilla extract
  • ½ teaspoon almond extract
  • 1 teaspoon lime zest
  • 1/3 cup guava jam, for filling cookies

How to Make

  • Step 1: Preheat oven to 350 degrees Fahrenheit

  • Step 2: In a large bowl

  • Step 3: Whisk together flour and kosher salt.

  • Step 4: Set aside.

  • Step 5: Beat butter and sugar until pale and fluffy.

  • Step 6: Add in vanilla and almond extracts, and lime zest, mixing well.

  • Step 7: Slowly add in the dry ingredients until incorporated.

  • Step 8: Line two baking sheets with parchment paper.

  • Step 9: Using a 1-inch cookie scoop, measure out dough and roll into a ball with your hands.

  • Step 10: Transfer to prepared baking sheets. Press dough to flatten slightly, and make a thumbprint into center of each ball, about 1/2” deep.

  • Step 11: Fill each hole with a small spoonful (about a teaspoon) of guava jam

  • Step 12: Bake until edges of cookies are golden, 13 to 15 minutes.

  • Step 13: Cool on baking sheets before serving.
