Step 1: Preheat oven to 350 degrees Fahrenheit
Step 2: In a large bowl
Step 3: Whisk together flour and kosher salt.
Step 4: Set aside.
Step 5: Beat butter and sugar until pale and fluffy.
Step 6: Add in vanilla and almond extracts, and lime zest, mixing well.
Step 7: Slowly add in the dry ingredients until incorporated.
Step 8: Line two baking sheets with parchment paper.
Step 9: Using a 1-inch cookie scoop, measure out dough and roll into a ball with your hands.
Step 10: Transfer to prepared baking sheets. Press dough to flatten slightly, and make a thumbprint into center of each ball, about 1/2” deep.
Step 11: Fill each hole with a small spoonful (about a teaspoon) of guava jam
Step 12: Bake until edges of cookies are golden, 13 to 15 minutes.
Step 13: Cool on baking sheets before serving.
