Ingredients

The ingredients are:
  • 1 1/2 pounds fresh mussels (cleaned)
  • 3 fresh hot red chillies, finely chopped
  • 2 large cloves garlic chopped
  • 4 tablespoons cilantro, chopped
  • 2 tablespoons olive oil
  • 1/2 cup white wine
  • 1 medium (16 ounces) baguette bread (or 2 crispy rolls)

How to Make

  • Step 1: In a small food chopper or by hand finely chop the chillies and garlic

  • Step 2: Heat the oil in a large skillet (it needs to have a lid) heat the chillie/garlic for a minute. add wine and mussels, cover

  • Step 3: Cook over medium heat for about 10 minutes. The mussels cook very quickly.

  • Step 4: Stir in the cilantro. Discard any mussels that did not open

  • Step 5: Enjoy using the bread to soak up the lovely sauce
