  • 1/4 to 1/2 teaspoon salt, or to taste
  • Black pepper, to taste
  • 2 tablespoons butter
  • 1 large green onion, chopped
  • 1/2 cup shredded cheddar cheese (can use more or less)

How to Make

  • Step 1: In a bowl whisk eggs with sour cream until blended. Season with salt and pepper.

  • Step 2: Melt butter in skillet. Add onion; cook until tender. Pour in egg mixture, sprinkle with cheddar cheese and cook over medium-low heat until done

  • Step 3: Turn portions of egg mixture with spatula as it begins to thicken; do not stir and do not overcook.
