Step 1: Place water, onion and ham hocks on to boil.
Step 2: Simmer on high for 2 hours until the water is smokey.
Step 3: Add the carrots and potatoes.
Step 4: Add seasonings and herbs.
Step 5: Simmer on low for 45 minutes more.
Step 6: Take out ham and shred meat.
Step 7: Add just meat back in before you add sour cream.
Step 8: Add flour to the sour cream and put in soup swirling around.
Step 9: Let thicken.
Step 10: Last 5 minutes add horseradish and cream, don't boil just heat.
Step 11: Season to taste, add more horseradish if needed.
