Step 1: Preheat oven to 325 degrees Fahrenheit
Step 2: Butter six individual custard dishes(ramekins)and coat with sugar
Step 3: Place a folded towel on bottom of a roasting pan and boil water for water bath.
Step 4: Whisk the sugar and flour together
Step 5: Set aside.
Step 6: In a separate bowl
Step 7: Whisk the yolks and butter until smooth
Step 8: Whisk in the milk, lemon juice, salt and lemon zest until blended
Step 9: Whisk the flour mixture into this.
Step 10: ( the batter will be very liquid)
Step 11: Beat the egg whites until stiff and fold into the above mixture.
Step 12: Immediately ladle into the custard cups and place in the prepared baking pan filled halfway with hot water.
Step 13: Bake until the puddings are puffy and golden on top, about 50 minutes.
Step 14: Serve warm
