Ingredients

The ingredients are:
  • 3 tablespoons butter, melted, cooled
  • 3/4 cup sugar
  • 1 tablespoon lemon zest
  • 3 eggs, separated,large
  • 1/3 cup flour
  • 1 cup milk
  • 6 tablespoons meyer lemon juice ,(70g)
  • 1/8 teaspoon salt

How to Make

  • Step 1: Preheat oven to 325 degrees Fahrenheit

  • Step 2: Butter six individual custard dishes(ramekins)and coat with sugar

  • Step 3: Place a folded towel on bottom of a roasting pan and boil water for water bath.

  • Step 4: Whisk the sugar and flour together

  • Step 5: Set aside.

  • Step 6: In a separate bowl

  • Step 7: Whisk the yolks and butter until smooth

  • Step 8: Whisk in the milk, lemon juice, salt and lemon zest until blended

  • Step 9: Whisk the flour mixture into this.

  • Step 10: ( the batter will be very liquid)

  • Step 11: Beat the egg whites until stiff and fold into the above mixture.

  • Step 12: Immediately ladle into the custard cups and place in the prepared baking pan filled halfway with hot water.

  • Step 13: Bake until the puddings are puffy and golden on top, about 50 minutes.

  • Step 14: Serve warm
