Ingredients

The ingredients are:
  • 1 1/2 pounds dried salt cod
  • 2 pounds potatoes,3 medium sized
  • 1/2 cup water
  • 1 tablespoon butter,melted
  • 1/16 teaspoon white pepper,(13/100 )
  • 3 tablespoons flour, more or possibly less
  • 1/4 cup butter
  • 6 ounces white bread, toasted,(6 slices)
  • 6 eggs,poached ,large
  • 6 ounces bacon,(6 slices )crisp-cooked

How to Make

  • Step 1: Cover the fish with cool water.

  • Step 2: Let stand 12 hours.

  • Step 3: Drain.

  • Step 4: Arrange the fish in Dutch oven.

  • Step 5: Cover again with cool water.

  • Step 6: Bring to a boil and drain.

  • Step 7: Return fish to the pan.

  • Step 8: Take potatoes and slice very thin, add them to the fish.

  • Step 9: Pour in 1/2 cup water.

  • Step 10: Cover and cook over low heat for about 30 minutes possibly till cod and potatoes are tender, adding more water if necessary to keep from scorching. Remove from the heat.

  • Step 11: Cool till the mix can be handled easily. Remove any bones from the fish and drain mix well.

  • Step 12: Mash fish and potatoes and blend in the melted butter and pepper.

  • Step 13: The cakes about 3-inches in diameter and 1-inch thick.

  • Step 14: Dip well in flour.

  • Step 15: Heat butter in a large skillet and fry cakes, turning to brown both sides. Serve cakes on slices of toast and top each with poached egg, then a strip of bacon.
