  • 1/4 pound fresh mozzarella cheese, thinly slicedinto bite sized pieces
  • 1/2 cup red onion, thinly sliced
  • 1/8 cup green olives, roughly chopped
  • 1 tablespoon capers
  • 1/4 cup fresh Italian parsley,minced
  • 1/4 teaspoons dried oregano
  • 1 clove garlic, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup extra virgin olive oil
  • 1 ounce freshly grated parmigiano cheese

How to Make

  • Step 1: Cook the pasta until just al dente.

  • Step 2: Drain

  • Step 3: While the pasta is cooking

  • Step 4: Place in a large serving bowl

  • Step 5: The tomatoes, mozzarella, onions, olives, capers, parsley, oregano, garlic, and salt and pepper to taste.

  • Step 6: Pour the oil over and toss gently.

  • Step 7: When pasta is ready

  • Step 8: Add the warm spaghetti to the bowl.

  • Step 9: Toss all together
