  • 1 tablespoon chili powder
  • 1/4 teaspoon black pepper
  • 1/2 cup cornmeal
  • 1 cup water
  • Topping:
  • 1 cup milk
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1/2 cup cornmeal
  • 2 eggs, slightly beaten

How to Make

  • Step 1: Preheat oven to 375 F.

  • Step 2: Cook the ground beef for about 5 minutes.

  • Step 3: Add the onion, garlic, and green pepper to the skillet

  • Step 4: Cook, stirring, until onion is tender.

  • Step 5: Stir in 1/2 cup cornmeal mixed with the 1 cup water

  • Step 6: Cover and simmer for 10 minutes.

  • Step 7: Stir in tomatoes, corn, salt, chili powder, and pepper

  • Step 8: Simmer for 5 minutes longer.

  • Step 9: Spoon into a greased 3-quart casserole.

  • Step 10: Topping:

  • Step 11: In saucepan

  • Step 12: Heat the milk with 1 teaspoon salt and butter

  • Step 13: Slowly whisk in 1/2 cup cornmeal

  • Step 14: Cook, stirring, until thickened.

  • Step 15: Remove from heat temper in the eggs. Pour over meat mixture.

  • Step 16: Bake for 30 to 40 minutes.
