Ingredients

The ingredients are:
  • 3 cups cooked sweet potatoes,peeled,mashed ,hot
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 4 tablespoons sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 4 egg whites ,beaten stiff
  • 4 egg yolks
  • 2 tablespoons port wine

How to Make

  • Step 1: Preheat oven to 325 degrees

  • Step 2: Mix the butter,sugar and spices into hot potatoes

  • Step 3: Let cool and mix egg yolks with port

  • Step 4: Add to cooled potatoes tempering the egg yolks

  • Step 5: Then fold in the whites gently

  • Step 6: Grease a 1 1/2 quart souffle dish ,(pam spray)

  • Step 7: Pour sweet potatoes in and bake 35 minutes

  • Step 8: Serve immediately
