Step 1: Chop the chicken into 1-inch pieces and set aside.
Step 2: Mix the soy sauce and water, then blend into the cornstarch
Step 3: Stir in the sherry, sugar, ginger, red pepper, and salt.
Step 4: Preheat a wok over high heat
Step 5: Add 2 teaspoons of peanut oil.
Step 6: Stir-fry the green peppers and onions for 2 minutes and remove.
Step 7: Add the walnuts and stir-fry for 1 to 2 minutes until golden brown.
Step 8: Remove.
Step 9: Add the rest of the oil and stir-fry half of the chicken for 2 minutes.
Step 10: Remove repeat adding more oil if needed
Step 11: Return all the chicken to the wok and stir in the soy mixture.
Step 12: Cook and stir until bubbly.
Step 13: Stir in the vegetables and walnuts, cover and cook for 1 minute
