Ingredients

The ingredients are:
  • 1 tablespoon butter,divided
  • 4 eggs
  • 3 ounces salmon fillets,boneless
  • 2 tablespoons nopales ,minced
  • 1 avocado,cubed
  • 2 ounces corn tortillas(4)
  • 1/16 teaspoon salt
  • 1/16 teaspoon pepper, to taste

How to Make

  • Step 1: Melt half the butter in a small skillet over medium heat.

  • Step 2: Season the salmon with salt and add it to the pan.

  • Step 3: Cook on medium heat for 3 minutes per side.

  • Step 4: Add nopales just to heat

  • Step 5: Remove them from the pan.

  • Step 6: Chop and mix with the cactus

  • Step 7: Add the rest of the butter to the same pan.

  • Step 8: Lower the temperature to medium low. Scramble the eggs in a bowl, then add them to the pan.

  • Step 9: Once the egg is almost cooked through, add the avocado pieces and gently fold the eggs to incorporate everything. Remove from the heat as soon as the eggs are completely cooked.

  • Step 10: Heat up the tortillas in the microwave wrapped in a damp paper towel for 10 seconds until they are pliable.

  • Step 11: Then load them up with the eggs and salmon.
