Ingredients

The ingredients are:
  • 8 ounces frozen tater tots ,(36 )
  • 10 eggs
  • 2 tablespoons water
  • 1 teaspoon parsley flakes
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup bell pepper,chopped
  • 1/2 cup onions,chopped
  • 6 ounces cheddar cheese,shredded

How to Make

  • Step 1: Preheat oven to 400 degrees

  • Step 2: Spray pam cooking spray to a standard size muffin pan.

  • Step 3: Place the tater tots in the microwave for a few minutes or until they are soft enough to smash, then place 3 in each muffin cup.

  • Step 4: Smash them with the bottom of a small cup, and then place them in the oven for 10 minutes.

  • Step 5: Remove the tots from the oven and lower the temperature to 350 degrees.

  • Step 6: Evenly distribute veggies into each cup.

  • Step 7: Mix the eggs ,parsley, water and seasoning together and then pour the mixture evenly into each cup. I mixed it in a cottage cheese container and worked great to pour.

  • Step 8: Fill each cup up about 80% .

  • Step 9: They do expand in the oven.

  • Step 10: Sprinkle the top with a bit of shredded cheese(about 1 tablespoons)and bake for 20 minutes, or until the egg is cooked through
