The ingredients are:
  • 1 pound dried large lima beans
  • 1⁄4 cup butter
  • 1 cup onion, finely chopped
  • 1 tablespoon fresh garlic, minced
  • 1 tomato
  • 1 tablespoon sugar
  • 1 can (10 ounce)rotel tomatoes
  • 1 pound smoked sausage , sliced
  • 1 teaspoon salt,to taste
  • 1/2 teaspoon pepper,to taste

How to Make

  • Step 1: Soak beans in enough water to cover, overnight

  • Step 2: Drain and rinse.

  • Step 3: Melt butter and add onion and garlic. Saute for 10 minutes.

  • Step 4: Add fresh tomato and sugar.

  • Step 5: Saute for 5 minutes.

  • Step 6: Add Rotels, beans, sausage and enough water to cover beans by one inch.

  • Step 7: Cook 2 hours or until tender.

  • Step 8: Add salt and pepper.

  • Step 9: Serve over rice.
