Ingredients

  • 1 (4 ounce) beef filet mignon ,chopped fine ,bacon chopped fine also
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon oil
  • 2 tablespoons butter
  • 1/8 cup onion,minced
  • 4 mushrooms,chopped
  • 1/4 cup tomatoes,chopped
  • 1 teaspoon parsley,minced
  • 4 eggs
  • 4 ounces swiss cheese,shredded

How to Make

  • Step 1: Cut steak into small cubes

  • Step 2: Season steak with salt and pepper.

  • Step 3: In pan

  • Step 4: Heat oil over high heat.

  • Step 5: Sear steak cubes until well browned on two sides, about 5 minutes.

  • Step 6: Transfer steak cubes to a clean plate .

  • Step 7: Melt butter in the pan;

  • Step 8: Add bacon

  • Step 9: Stir in mushrooms and onions.

  • Step 10: Sauté until browned, about 5 minutes. Return steak cubes to pan and reduce heat to medium.

  • Step 11: Stir in eggs,

  • Step 12: Remaining seasoning, cheese and tomatoes.

  • Step 13: Gently stir in a figure 8 motion until eggs just begin to set, 3-4 minutes.
