Step 1: Core, rinse and drain lettuce thoroughly
Step 2: Chill in disposable plastic bag .
Step 3: Bring chicken stock, apple juice, lemon juice, curry powder, rosemary and bay leaf to a boil.
Step 4: Add chicken breasts.
Step 5: Cover and simmer 15 to 20 minutes or until chicken is tender.
Step 6: Cool in broth.
Step 7: Remove skin, debone,cut into large chunks.
Step 8: Tear lettuce into bite-size pieces.
Step 9: Toss with 2 or 3 tablespoons chicken broth, corn oil, salt, pepper and grapes. Top with crumbled and cubed cheese. Heat remaining broth to sip with salad.
