Step 1: Prepare Mornay sauce.
Step 2: In pan, melt butter.
Step 3: Add flour and cook over medium heat, whisking regularly, 2 to 3 minutes.
Step 4: Do not let mixture burn or brown
Step 5: Add chicken base, then gradually add milk, whisking until smooth.
Step 6: When milk is hot, take off heat and stir in cheeses
Step 7: Stirring, until mixture is smooth and cheese is melted
Step 8: Put aside
Step 9: Preheat broiler.
Step 10: Lightly butter four casserole dishes, each large enough to hold a slice of bread.
Step 11: Set a slice of toast in the bottom of each casserole.
Step 12: Top each with a fourth of the turkey. Pour about ½ cup Mornay sauce over each sandwich
Step 13: Then garnish with black olives and Parmesan cheese.
Step 14: Set under broiler and cook until sauce bubbles and cheese is lightly browned, about 3 minutes.
