Step 1: Marianade:
Step 2: Combine vinegar, 1 cup water, 1/4 cup onion, bay leaves, paprika, cloves, and thyme.
Step 3: Heat, but do not boil.
Step 4: Pour over meat.
Step 5: Cover and store in a cool place (fridge)for several days, (3),turning meat once each day.
Step 6: Remove meat, drain.
Step 7: Strain and save marinade.
Step 8: Soup:
Step 9: Coat the meat with 1/4 cup of flour and sear in shortening.
Step 10: Add carrot, parsnip, celery, and remaining 1/4 cup of onion and cook for 5 minutes, stirring constantly.
Step 11: Pour marinade over meat.
Step 12: Cover and simmer for 3 hours.
Step 13: Remove meat and keep hot.
Step 14: Gravy:
Step 15: Mix remaining 1/4 cup of flour and the salt with 1/2 cup of water.
Step 16: Stir into sauce and cook until thickened. Strain gravy, add wine, and serve over meat
