  • 1 tablespoon butter
  • 1 tablespoon flour
  • 3 eggs,hard-boiled, peeled,mashed
  • 1 lemon,grated rind
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups milk
  • 1/2 pound cooked fresh crab meat
  • 8 ounces heavy cream,(1/2 cup)
  • 1/2 cup sherry
  • 1/4 teaspoon worcestershire sauce

How to Make

  • Step 1: Combine butter and flour in a soup pot. Stir in mashed hard-boiled eggs, grated lemon zest , juice

  • Step 2: Salt and pepper to taste.

  • Step 3: Bring milk almost to a boil in a saucepan.

  • Step 4: Pour it slowly into the egg mixture, stirring to combine.

  • Step 5: Add crab meat and heat through gently, for about ten minutes.

  • Step 6: Stir in cream, and bring soup back to a near boil.

  • Step 7: Remove from heat and stir in sherry and two dashes of Worcestershire sauce
