Step 1: Place blueberries in large, non-metal bowl. Add vinegar, cover tightly and let sit in refrigerator for at least 3 days.
Step 2: Pour the blueberry/vinegar mixture through a sieve into a medium saucepan. Press down on the berries to extract as much juice as possible. Discard or compost the solids.
Step 3: Srit the sugar into the juice and bring to boil over high heat. Cook for 3 minutes, constantly stirring. Remove from heat and let cool before putting it in a container to chill in fridge .
Step 4: To serve, fill a medium glass with ice, add 1/4 cup blueberry concentrate and fill with cold sparkling or still water.
