Ingredients

The ingredients are:
  • 2 pounds shrimp, peeled
  • 1/2 pound crab meat
  • 3 ounces bacon (3 slices)
  • 8 ounces smoked ham, diced
  • 2 tablespoons flour
  • 2 cups onions, minced
  • 1 cup celery, minced
  • 1/2 cup green bell pepper, minced
  • 1 clove garlic, smashed
  • 1 lemon
  • 1/2 teaspoon lemon zest
  • 1 teaspoons Worcestershire sauce
  • 1 teaspoon tabasco sauce
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • 3 cups water
  • 3 tablespoons bacon grease
  • 1 pound okra
  • 1/4 cup parsley, minced
  • 1/4 cup green onions, minced

How to Make

  • Step 1: Cook bacon and remove.

  • Step 2: Add ham and cook until browned, remove to bacon.

  • Step 3: Add flour and cook on low, and don't burn. Brown to dark chocolate color stirring constantly.

  • Step 4: Add onions and brown.

  • Step 5: Add celery and peppers and lemon zest.

  • Step 6: Cut lemon in half and chop half of lemon finely and add.

  • Step 7: Add seasonings and water.

  • Step 8: Crumble in bacon and add ham.

  • Step 9: Simmer for 45 minutes.

  • Step 10: Meanwhile, chop okra and brown lightly in bacon grease.

  • Step 11: After gumbo mixture has cooked 45 minutes, add the okra.

  • Step 12: Cook for 20 minutes more.

  • Step 13: Add seafood and cook until shrimp is cooked, about 5 minutes more.

  • Step 14: Add parsley and green onions.
