Ingredients

The ingredients are:
  • 3 to 4 pounds pork back ribs (2 full racks)
  • 2 tablespoon ground cinnamon
  • 2 tablespoons kosher salt
  • 2 tablespoons black pepper
  • 1 tablespoon ground cloves
  • 1 tablespoon ground corainder
  • 3 tablespoons coarsley chopped fresh ginger,
  • 2 tablespoons coarsley chopped fresh garlic
  • 3/4 cup rice vinegar
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup ketchup
  • 1/2 cup fresh cilantro
  • 1/3 cup fresh lime juice
  • 1/3 cup brown sugar
  • 1/4 cup hoisin sauce
  • 2 tablespoons dark sesame oil
  • 1 tablespoon crushed red pepper flakes

How to Make

  • Step 1: Clean and pull the tough membrane off the back of two racks of baby back ribs.

  • Step 2: Mix together the first five ingredients. Rub all over ribs, and cover and refrigerate for one hour.

  • Step 3: Heat oven to 375°. Place ribs in a single layer in baking pans with 1/4 cup of water. Cover and bake for about one hour, or until meat is pulling away from the bone.

  • Step 4: Stir together remaining ingredients and brush on tender racks of ribs. Grill over medium-high heat for 15 minutes.

  • Step 5: Alternately, put the oven rack in the middle and turn oven to broil. Broil 5-10 minutes, watching closely.
