Ingredients

The ingredients are:
  • 12 ounces dried navy beans, (2 cups)
  • 8 cups water
  • 1 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 cup carrot, trimmed, peeled, and diced
  • 1 cup turnip, trimmed, peeled, and diced
  • 1/4 cup parsnip, trimmed, peeled, and diced
  • 1 cup celery ,with leafy green tops, minced
  • 2 cups croutons

How to Make

  • Step 1: Soak beans overnight

  • Step 2: Cook until almost done about 60 minutes adding water as needed

  • Step 3: Season the mixture with salt and pepper. Add the diced carrots and turnips and simmer until tender, about 25 minutes. Add the parsnip and continue to simmer until all of the vegetables and beans are quite soft, 15-30 minutes longer.

  • Step 4: Taste the soup and adjust seasoning, adding more salt or pepper to taste, if desired.

  • Step 5: Pass the soup through a food mill to puree, or use an immersion blend to blend the soup till it reaches the desired texture

  • Step 6: Add celery and simmer until tender about 15 minutes

  • Step 7: To plate :

  • Step 8: Put croutons in bottom of a bowl and pour soup over them
