Step 1: Remove steaks from refrigerator 30 minutes before cooking.
Step 2: Season steaks with salt and pepper to taste,I would go heavy.
Step 3: Heat oil in medium pan over medium-high heat.
Step 4: Place steaks in pan, and sear 4 to 5 minutes per side for medium rare.
Step 5: Least rest foil covered for 10 minutes
Step 6: Cut on the bias
Step 7: Madeira Sauce:
Step 8: Melt butter in medium saucepot over medium heat.
Step 9: Add shallots, and saute 4 to 5 minutes, until lightly browned.
Step 10: Add peppercorns and thyme, and saute another 2 minutes.
Step 11: Add wine, and bring to boil for 10 minutes, or until reduced by 80%.
Step 12: Add demiglace, return to boil, and decrease heat to simmer for 5 minutes.
Step 13: Season with salt and pepper.
Step 14: Strain
Step 15: Pour over steaks
