Step 1: Take off the skin and mince one clove of garlic and two inches of ginger.
Step 2: Slice the green onions and set aside.
Step 3: Over medium heat
Step 4: Add in the chicken broth, shoyu, sugar, garlic, ginger, and chicken thighs.
Step 5: Bring it to a boil.
Step 6: Then turn the heat down to bring it to a simmer. Skimming foam
Step 7: Cover the pot and simmer it for 40 minutes.
Step 8: Meanwhile soak the bean thread in a bowl with water.
Step 9: Make sure the water covers all of the noodles.
Step 10: Remove the chicken after 40 minutes and begin to shred it.
Step 11: Discard the skin and bones.
Step 12: Bring the shredded chicken back to the pot and add in the bean thread.
Step 13: Stir it all together and let it cook for another 5 minutes or until the noodles begin to look clear.
Step 14: Garnish it with green onions.
