Step 1: Melt butter in a dutch oven
Step 2: Add bacon, onions, carrots, garlic, and shallots.
Step 3: Brown lightly.
Step 4: Remove veggies to a separate plate with a slotted spoon, and brown the chicken in the remaining juices.
Step 5: Remove the chicken to a separate plate, add the wine and seasonings, and stir to incorporate all the little brown bits in the pan.
Step 6: Put the chicken back in, turn to low, and simmer for 40 minutes with lid OFF.
Step 7: Lightly saute (in 2 tablespoons butter) mushrooms
Step 8: Remove chicken from pan, whisk in flour (i would add some water to make a slurry)until sauce is thickened and bubbly.
Step 9: Adding chicken back in after adding flour .
Step 10: For the last 10 minutes of the chicken cooking, add the mushrooms and the vegetable mixture to the chicken.
Step 11: Check for seasonings
