Ingredients

The ingredients are:
  • FOR DRESSING
  • 1 cup mayonnaise
  • 1 tablespoon cider vinegar (plus 1 teaspoon)
  • 1 1/2 tablespoons honey
  • 2 teaspoons poppy seeds
  • Kosher or coarse sea salt, to taste
  • Freshly ground black pepper, to taste
  • FOR SALAD
  • 1 pound cooked rotisserie chicken (skin removed, meat pulled from bones and meat chopped into bite-size pieces, 1/2 whole chicken)
  • 2/3 cup chopped pecans (toasted and coarsely chopped)
  • 2 cups grapes (halved red seedless grapes)
  • 3 celery ribs, chopped
  • 1/2 cup onion, chopped (red onion)

How to Make

  • Step 1: In a large bowl, combine all the salad ingredients and toss with the reserved dressing.

  • NOTE: If desired, serve this salad over a bed of greens. This also makes a great wrap or served in a seeded melon half.
