Ingredients

The ingredients are:
  • 2 eggs
  • 1 1/3 cup milk (330 ml)
  • 2 tablespoon caster sugar (superfine)
  • 2 cups self-raising flour
  • 1/2 teaspoon bicarbonate of soda (baking soda)
  • 40 grams butter
  • 240 grams sliced bacon (rindless bacon, 4 slices rindless bacon similar to Canadian)
  • 3/4 cup maple syrup (pure, 180 ml)

How to Make

  • Step 1: Whisk eggs, milk, sugar and sifted flour and soda in medium bowl until batter is smooth.

  • Step 2: Melt 1 teaspoon of the butter in medium frying pan and pour 1/3 cup of batter into pan, spread into a round shape and cook about 2 minutes or until bubbles appear on the surface; turn flapjack over, cook until browned underneath and transfer to a plate; cover to keep warm and then repeat with remaining butter and batter to make a total of 8 flapjacks.

  • Step 3: Cut bacon slices lengthways into 3 pieces and cook bacon in heated large frying pan until crisp and drain on absorbent paper.

  • Step 4: Serve flapjacks topped with bacon and maple syrup.
