Ingredients

The ingredients are:
  • 375 grams dry pasta (ribbon)
  • 210 grams salmon (red, tinned, drained and flaked)
  • 100 grams sun-dried tomato (plus some oil, 1⁄2 cup needed)
  • 40 grams capers (2 teaspoons needed)
  • 30 grams fresh basil leaf (1⁄2 cup needed)
  • 2 teaspoons balsamic vinegar (good quality)
  • Parmesan fresh, grated cheese to serve
  • Black pepper, fresh cracked to serve

How to Make

  • Step 1: Cook pasta in boiling water, (following manufacturer's packet instructions) until al dente and when ready drain spaghetti and return to hot saucepan.

  • Step 2: In a separate pan on low heat add red Salmon, sun dried with 1 tablespoon of their oil, capers and balsamic. You are only heating the ingredients, no need to cook them. When the salmon mix is heated through add to the saucepan with the spaghetti along with the fresh basil leaves and toss it all well until combined.

  • Step 3: Season with salt and cracked black pepper & serve warm topped with grated Parmesan Cheese.

  • Step 4: Serve immediately.
