Step 1: Heat your oven to 450° Fahrenheit. Place parchment paper on a baking sheet.
Step 2: Cut the butternut in half lengthwise. Scoop out the seeds and rinse it. Cut the squash into 1/2 inch cubes.
Step 3: In a bowl, mix the squash, garlic, and red onion. Spread the mixture onto the parchment lined baking sheet. Drizzle olive oil over everything, then add the salt and pepper. Cook for 30 to 40 minutes. Toss it after 20 minutes, so as to have even cooking.
Step 4: After you've removed it from the oven, toast the ciabatta buns lightly. Evenly spread some goat cheese onto the bottom of the four slices.
Step 5: Place butternut mixture on each of the two bottom buns. Add the arugula on top of the squash.
Step 6: Drizzle the glaze evenly over the arugula, then add the top bun.
