  • 2 boxs(17 ounces) corn bread mix (7 ounces each)
  • 2 eggs
  • 2/3 cup milk
  • 2 pounds ground beef
  • 1/2 cup onion
  • 1 packet (1 ounce) taco seasoning
  • 1 can (15 ounces) pinto beans,undrained
  • 1 can (10 ounces) rotel tomatoes,undrained
  • 1 can (16 ounces)corn,drained
  • 4 ounces mexican cheese mix,shredded ,(1 cup)

How to Make

  • Step 1: Preheat oven to 425°

  • Step 2: In a mixing bowl, prepare the cornbread by mixing eggs and milk in .

  • Step 3: Set aside.

  • Step 4: Brown the ground beef and onions and drain if needed

  • Step 5: Add the taco seasoning, cheese, Rotel (undrained), pinto beans (undrained), and corn (drained) to the ground beef

  • Step 6: Mix and simmer for about 5 minutes

  • Step 8: Add cornbread mixture to meat mixture and stir until fully combined

  • Step 9: Pour everything into the baking dish
