  • 1/2 cup corn kernels (fresh or frozen and thawed)
  • 2 tablespoons cilantro, minced
  • 2 tablespoons parsley, minced
  • 1 to 2 tablespoons jalapeno pepper ( seeded and minced, 1 pepper)
  • 1/2 teaspoon minced garlic
  • 2 tablespoons lemon juice
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 teaspoon kosher salt
  • 1 cup avocado, diced (about 1 medium)
