Step 1: Drain the soaked beans and place them in a large pot with the water and the next 6 ingredients (-bell pepper) and bring to a boil over medium high heat; reduce heat to low and simmer, covered for 1 1/2 hours.
Step 2: Stir in the next 3 ingredients (chorizo - greens) and continue to simmer over low heat for another 30 minutes or until beans are tender. Remove ham bone/hock, cutting any meat off the bone and return meat to pot. Remove chorizo and slice it into pieces that are about 1/4 inch thick and return to the pot. Remove the flank steak and shred and return to pot. Discard salt pork.
