Ingredients

The ingredients are:
  • 1 cup dried kidney beans (white beans, rinsed and picked over and soaked overnight)
  • 3 quarts water
  • 1 pound beef flank steak (cut into pieces)
  • 1/2 pound ham bone (or 1 ham hock, about 1/2 pound)
  • 2 ounces salt pork (rind removed)
  • 1 onion, chopped
  • 1 teaspoon salt
  • 1 green bell pepper (seeded and chopped)
  • 8 ounces chorizo sausages (this is about 3 sausages)
  • 2 potatoes, peeled and diced
  • 1/2 pound turnip greens (or your favorite soup greens, stems removed and greens washed and shredded)
  • Pepper

How to Make

  • Step 1: Drain the soaked beans and place them in a large pot with the water and the next 6 ingredients (-bell pepper) and bring to a boil over medium high heat; reduce heat to low and simmer, covered for 1 1/2 hours.

  • Step 2: Stir in the next 3 ingredients (chorizo - greens) and continue to simmer over low heat for another 30 minutes or until beans are tender. Remove ham bone/hock, cutting any meat off the bone and return meat to pot. Remove chorizo and slice it into pieces that are about 1/4 inch thick and return to the pot. Remove the flank steak and shred and return to pot. Discard salt pork.
