Step 1: Preheat oven to 400°F.
Step 2: Slice tomatoes lengthwise in half and gently remove the seeds.
Step 3: Place cut-side up on a rimmed baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and pepper.
Step 4: Roast 40-45 minutes, until tomatoes begin to caramelize.
Step 5: Let cool and enjoy...
Step 6: Keep in an airtight jar in the fridge for up to five days, or in the freezer for up to six months.
