The ingredients are:
  • 6 ounces dried rice noodles (thin noodles, malfun or angel hair pasta)
  • 2 to 3 heads lettuce, bibb or boston (24 leaves separated )
  • 1 to 1 1/2 pounds chicken thighs (grilled chicken, or breast, cut into bite-size pieces)
  • 1 1/2 cups carrots, grated
  • 1/3 cup peanuts, chopped (roasted)
  • Fresh herbs (of choice, mint, cilantro or basil, 24 sprigs)
  • 1 cup sweet Thai Chile sauce (or other favorite dipping sauce)

How to Make

  • Step 1: Cook noodles according to package directions. Drain, rinse and drain again. Divide into 24 individual nest-like portions or chop coarsely and arrange on a platter.

  • Step 2: Present noodles, lettuce, chicken, carrots, peanuts, herbs and sauce on platters and in bowls. Let diners build their own wraps by filling lettuce leaves in the following order: noodles chicken, carrots, peanuts and herbs. Spoon sauce over top. Enjoy, refrigerating and leftovers.
